ARC, named after the crescent-moon shaped dining room, is a buzzy spot in the Fairmont Waterfront Hotel that’s a favourite with locals and visitors alike.

Chef Michael Pagnacco and his team draw inspiration from the third-floor organic kitchen garden, where they grow more than 20 varieties of vegetables and have several beehives.

The menu is a love letter to local ingredients from land and sea, prepared with contemporary flair. Think char with cabbage and apple butter, steak tartare, harissa cauliflower and kale caesar salad.

Tipple on sophisticated cocktails, including tipples, garnished with herbs grown on-site, and don’t miss quality wines, many from local regions including the Okanagan Valley.
